Easy Chicken Fajitas

Some recipies are as awesome as they are simple to make. This one is as straightforward as it gets, serves 2-3 people and requires only basic skill for great reward. If you can fry something without setting fire to yourself, you can make this recipie. It's fairly cheap, too, especially if you use chicken thigh meat rather than breast.

For this piece of piss recipe you will need:

1 large onion, halved and thinly sliced
1 green pepper, sliced into strips
200g mushrooms, thinly sliced
300g chicken breast or thigh, sliced into strips
salt
pepper
2 teaspoon chilli powder
2 teaspoon paprika
1 teaspoon cumin
2-3 tablespoons of tomato paste
2 cloves of garlic, chopped and thinly sliced
6-8 soft flour tortillas to serve the mix on

Put the tomato paste and the garlic in a cup, add about a tablespoon of water and mix together. Add more water if necessary until the mix is about the thickness of double cream. Set aside, preferably somewhere near your hob, as that's where you're going to need it.

Put the chilli powder, cumin and paprika in a bowl wth a bit of salt and pepper, mix and then add the sliced chicken. Roll the chicken around to cover it with the spices.

Heat a wok or frying pan with about 3 tablespoons of oil (not olive oil) and add the chicken. Stir fry until the chicken is sealed and then add the onion.

Continue frying until the onion is soft, then add the mushrooms and green pepper. Stir fry for a further 2 minutes then add the tomato puree mix. Continue stir frying for a further 2-3 minutes, then serve immediately on the tortillas. You can have some grated cheese on top if you want, but definitely serve with lager. If you have to, serve with a green salad.
